As with all of your other vendors, when choosing a caterer for your prom, do your best to select someone who's already in the eco-know. This means that they prioritize using local and organic product, they have pre-existing relationships with local farms and they are very serious about proper management of all waste.

And don't stop at the buffet. Local and organic are terms that should be used when talking about your bar as well. Push for fresh juices from organic fruits, organic sodas and filtered water in place of high-sugar juices, classic sodas (you know the ones) and bottled water. If filtered tap water is not an option, then have the caterer fill pitchers from 5-gallon bottles- reduce the plastic waste! And, if coffee and tea are on the menu, then think Fair Trade.

Our goal is to have your prom generate as little waste as possible, and disposable tableware is a huge source of trash. Best case scenario, you have the resources to rent reusable china, flatware and glassware. If this is not an option, then be sure to select disposables that are compostable—and make sure to compost them! Also, don't be afraid to put a sign at the bar asking everyone to reuse their glass when they come back for refills. The less we use, the less energy and water we need to spend cleaning.
